Drink it now or cellar for up to 20 years. No need to decant but best to open it half an hour before service.

Spread over 11 hectares in the heart of Chianti, north of the city of Siena, the Caparsa winery has been managed since 1982 by Paolo Cianferoni, son of professor Reginaldo Cianferoni who bought the vineyards in 1965. Caparsa produces various styles of Chianti Classico and other traditional Tuscan wines from native varieties. The wines age in the seventeenth-century cellar of the estate.

The Sangiovese grapes, with small additions of Colorino, are harvested when fully ripe. Vinification takes place in concrete and large barrels, and the wine is then aged for 14 months in small Allier, Slavonian, American, or Hungarian oak vats, followed by 6 months in concrete, and an additional 3 months in the bottle.

The Chianti Classico Doccio a Matteo Riserva has an intense color with ruby tones. The aromatic profile is dominated by notes of black cherry, balsamic traces, and tobacco, with delicate hints of sweet spices (especially vanilla and cinnamon) and finally a ferrous minerality. On the palate, the wine is characterful with a lively freshness and a marked tannic backbone. The finish is long and elegant. Its sapidity makes it perfect in combination with game terrines and pâtés or red meat with tomato sauce.
