Located in Sicily, in the small town of Vittoria, COS is one of the most influential wineries on the island. The three founders, Giambattista Cilia, Cirino Strano, and Giusto Occhipinti, were fascinated by the Cerasuolo di Vittoria wine obtained from a blend of Nero d'Avola and Frappato and decided to found their winery in 1980. The climate of Vittoria gives the Nero d' Avola an extraordinary elegance, while the Frappato is characterized by great finesse. The company works to minimize the impact of aging in vessels as much as possible, so that the wines can express all the character of their terroir of origin.

Cos Spumante Metodo Classico is produced from Frappato grapes grown according to the principles of biodynamics, and coming from vineyards at about 250 meters above sea level. The harvest is manual, and the first alcoholic fermentation takes place in terracotta amphorae. Finally, the second fermentation takes place in the bottle according to the Classic Method, with 56 months of aging on the lees.

This sparkling wine shows a bright rosé color with a fine and persistent perlage. On the nose, the wine is very aromatic with notes of stone fruit, small berries, and some mineral hints. In the mouth, it is fresh and clean with a creamy and persistent effervescence. The fruity and mineral notes return to the palate and give character with a long and persistent finish. Perfect with tuna and salmon.
